What is Puff puff?

Most West Africans are familiar with this snack, but I’ll try and explain if this is new to you.

Puff puff is one of my favorite snacks. They are sweet fritters made from flour, yeast, and warm water (similar to doughnuts). They are then deep-fried until golden brown.

Puff puff is served as a snack or dessert, and it’s best to eat while still hot (as soon as possible) for best taste.

Serve with a cup of tea, juice, coffee, or wine. You can also eat as is, coat with sugar or honey, or dip in hot sauce.

In this recipe, as you can see from the title, I added plantains, and this gives another dimension to the regular puff puff. If you don’t have overripe plantains or you just want a plantain free puff puff click here for the recipe and click here for my spicy puff puff if you need something spicy.

How to achieve a perfect plantain puff puff

In order to achieve the perfect texture for your plantain puff puff

  • Always dissolve the yeast in lukewarm water and leave the dough to rise in a warm environment
  • It’s very important to give the dough time to rise this will yield a fluffy puff puff.
  • Deep fry the puff-puff batter in hot oil and fry them in batches in order. Otherwise, the puff puff will probably stick together, and the temperature of the oil will decrease.

So go ahead, spoil yourself! Give this plantain puff puff recipe a try and enjoy as is, with some sprinkle of sugar, dip in hot sauce, or serve with ice cream!

If you love plantains, you will love these plantain recipes:

  • Sugar is optional because the plantains are really sweet, however, if you have a sweet tooth, feel free to add some.
  • It’s very important to mix the batter for at least one minute. This will help to develop the gluten
  • I used instant yeast in this recipe, so I did not have to proof my yeast; however, if you are using active yeast, I will advise you to proof it for best results.
