Onion Baked Chicken is an easy recipe that changes up the chicken game in your kitchen. A nice addition to your party food.
- 3 chicken quarters
- 1 small red onion
- 2 small stock cubes
- 1 teaspoon Nigerian curry powder
- 1 teaspoon black pepper powder
- 1 teaspoon thyme
Notes on the ingredients
These are chicken quarters:
- I used soft chicken because I baked the chicken from raw. If you will use hard chicken, you will need to first of all cook the chicken with thyme, onions, stock cubes and whatever else you use to season your chicken. When done, store the water (chicken stock) in your freezer then start continue from Step XXX in the directions.
- No salt needed because the salt in the stock cubes are enough for me and my family, you can add salt if you wish.
Serve with any Nigerian Rice dish and/or Salads. You can also serve it as a snack with a chilled drink. Onion Baked Chicken is a great addition to your party food.
