WHAT TYPE OF POTATOES CAN I USE?
The type of potato is the only element that I must be a little strict on. They need to be russet, Irish, or other similar potatoes that are both starchy and waxy.
You want them to be tender but hold their shape as they soak up all of the delicious flavors from the sauce. It’s best to make this in a large, heavy-bottomed pan so that the flavors can permeate all of the ingredients, everything cooks evenly, and you end up with the perfect heavenly Hotpot.
